PB & J Oatmeal Cinnamon Bars - Low Sugar Recipe

Really Easy Recipe: Peanut Butter and Jelly Cinnamon Oatmeal Bar, a low sugar snack


Ingredients

2 very ripe bananas
1 egg
1 teaspoon vanilla  
2 cups rolled oats
1/2 teaspoon salt
1/2 chopped nuts/seeds - Mine was peanuts, sunflower seeds, and walnuts
1/2 tsp of cinnamon

4 tbs of fruit jam/fruit spread - mine was half marmalade, half raspberry Polaner all-fruit
1/2 tbs coconut oil
4 tbs crunchy peanut butter

another 1/2 tsp of cinnamon

Instructions

Preheat oven to 350 degrees. In a large bowl mash the ripe bananas into a smooth liquid. Add the egg and vanilla and stir. Add the salt, oatmeal and nuts. Mix well and set aside.

In a medium frying pan, melt the coconut oil then add the fruit jam. Stir and bring to a boil so the mixture bubbles. Stir and let reduce about a minute. In a medium bowl add, the hot reduced jam and the peanut butter and mix well. The hot jam reduction will incorporate the peanut butter and then you'll have a nice gooey delicious PB&J mixture.

Lightly grease a 9x9 baking dish. Spread about a half inch layer of the oatmeal mixture. Use half the PB&J mixture and spread over the top layer. Add the rest of the oatmeal bar mixture on top. Spread the rest of the PB&J mixture over the top. Sprinkle the top with cinnamon as a garnish. Bake in oven for 30 minutes with the sides brown.
