The ingredients are fresh light cream, fresh dill, butter and potatoes. If you really want them to be amazing, using fresh cream from a local dairy, fresh dill from a local farm, fresh potatoes, also from a local farm, of three different varieties (white, fingerling and red) well washed and boiled with skin on and some real butter. Put it all in the processor to chop at low speed so they've got some chunks. Add salt & pepper. For me today it went like this:
10 small fingerling, red, and white potatoes, chopped then boiled
1/4 c light cream
2 tsp butter (you don't need that much since the potatoes taste buttery)
1 tbs finely chopped dill
salt & pepper
I love the heck out of mashed potatoes.
