I think I will make this from my garden tomorrow. I will let you know how it works out:
1 tbs minced lemon balm
1 tbs lime juice
1 tsp honey
2 tbs cider vinegar
2 tbs evoo
1 heaping tsp some kind of good mustard
finely chopped cucumber
whatever (reg) oz can of dried chick peas
1 bunch of parley, chopped (like, grab a fistful, de-stem and roughly chop)
coriander
salt and pepper
Mix and fridge for a while. Let the parsley go a little limp, as if in tabouli. Serve on a bed of red leaf lettuce with shaved carrots.
