Parsley and Boston Lettuce Salad with Lime Dressing

I've been watching Nigella Lawson on YouTube lately, both for recipes and fashion tips. She's not a vegetarian but most of her recipes can be easily adapted. She's so beautiful and she's by no means skinny. Check out these "Nigella Lawson: Forever Summer" episodes for your inspiration. Below is my salad recipe, inspired by her 'Forever Summer" salads.

Dressing:
about 2 heaping tbs of thinly sliced and chopped red onion
zest of a lime
juice of a lime
salt & pepper
splash of Bragg's Liquid aminos
enough water to immerse onions (about 1-2 tsp)

2 handfuls of fresh parsley, roughly chopped
1 head of Boston lettuce, washed and torn
halved and sliced cucumber
1/2 can chick peas
1 tbs evoo

Prepare the dressing and let sit in fridge for at least a half hour. Prepare rest of ingredients and toss in large bowl. When lime dressing ready, add to salad and toss. Serve and enjoy.
