Sweet and Savory Red Lentil Stew Recipe

Recipe: Sweet and Savory Red Lentil Stew


I bought some organic hard cider to try but it wasn't nearly as good as the homemade cider my friend makes, so I decided instead of dumping it, I would use it to cook beans with.

1 cup dry red lentils
1/2 cup dry brown rice
1/4 cup dried currants
1 cup hard cider
1 cup chopped tomatoes
1 cup or more (depending on how thick you want the stew) water
2 tbs Bragg's Liquid Aminos
2 tbs evoo
1 tsp chopped fresh dill weed
salt & pepper
1/2 tsp srirachi, if you feel like it
1/4 tsp cumin
1/4 tsp cinnamon

Add all ingredients in the slow cooker and cook until rice and lentils are tender. (Four hours).
