Spicy Vegetarian Vegetable Kale Soup Recipe

Recipe: Spicy Vegetarian Vegetable Kale Soup

1 tbs evoo
1 tbs butter (optional-double evoo if not using butter)
1/2 small onion, chopped
2-3 celery stalks, chopped
2 tsp chipotle haberno hot sauce
1/2 tsp smoked paprika
1 heap tsp minced garlic
1/2 tsp dried oregano
salt & pepper
1 16 oz bag frozen mixed vegetables (carrots, peas, corn, green beans and lima beans)
1 can chopped tomatoes
1/2 bunch of finely chopped kale
1/4 cup dry barley
4 quarts water
1 bullion cube
1 bay leaf

Heat butter and evoo over med high heat. Saute onion and celery until onion begins to get clear. Add hot sauce and spices and garlic and salt & pepper. Stir well. Add mixed veggies, canned tomato, bullion, water, kale and bay leaf. Stir well. Bring to a boil. Set to low and simmer 30-45 minutes or until all ingredients look cooked through. Taste for readiness. Garnish with cheese, parsley or nothing at all!
