Went to the grocery store and lots of my fav things were on sale. Here's today's recipe. Next post will be potential list of things to make.
Recipe: Kale Stew with Potatoes and Lentils (as always, all ingredients are approximations)
2 tbs evoo
1/2 medium onion, chopped
3 cloved of garlic, chopped
1 head of kale, finely chopped, washed but only lightly rinsed
3 tbs soy sauce
1 tbs balsamic vinegar
5 spice mix (see below)
1 large baking potato, 1/2 in cubed
1/2 cup dry lentils
1 quart of water
salt & pepper along the way
5 spice mix - pre mix in small separate bowl:
-heaping tsp cumin
-heaping tsp paprika
-tsp sesame seed
-1/2 tsp cinnamon
-1/2 tsp red pepper flakes
salt & pepper
Directions: in large sauce pan, heat evoo over med high, add onion and garlic, stir til slightly brown, add kale, stir well (folding is good since there's a lot). Ad five spice, fold more until kale is wilted. Add potatoes and lentils. Stir well and add water. Cover, bring to boil. Simmer 40-45 minutes until lentil et al are tender.
